The Neo Tonic reimagines the classic with an ultra-smooth milk-washed gin, a hint of lime essence, and a mysterious touch of activated charcoal—delivering a bold look and even bolder flavour. The milk-washing process clarifies the gin, removing bitterness while layering in a velvety mouthfeel that will leave your guests questioning time and taste itself.

Ingredients
For the Cocktail
40ml Milk-Washed Gin
100ml Tonic Water
5ml Lime Essence
1 small pinch Activated Charcoal
1 Edible Flower Ice Cube (optional)
For the Milk-Washed Gin
200ml London Dry Gin
100ml Full Fat Milk
50ml Lemon Juice (or any acid)
Preparation
1. Milk-Wash the Gin
Pour gin into a mason jar. (Always pour milk into gin—not the other way around.)
Heat milk until it simmers, then slowly add to the gin.
Immediately add your acid (e.g., lemon juice) to trigger curdling. Shake gently.
Place the mix in the fridge for at least 3 hours.
2. Strain & Clarify
After chilling, double or triple strain through a cheesecloth to remove curds. It should be left with a clear, silky gin.
3. Build the Cocktail
Add the milk-washed gin, lime essence, and charcoal to a highball glass.
Add ice (and the edible flower cube if feeling fancy).
