Fresh flavours and long, golden evenings the Summer Solstice Spritz captures that seasonal magic with a delicate balance of floral, herbal, and citrus notes. Perfect for sipping in the sun or toasting the longest day of the year.

Gin provides a crisp, botanical base, while elderflower syrup brings a fragrant sweetness. Cucumber and basil cordial adds a refreshing, green complexity, and a splash of verjus or white grape juice gives a bright, lightly tart finish. Top it all with soda and Prosecco for a sparkling, celebratory drink that feels like summer in a glass.


This spritz is effortless yet elegant. A cocktail that’s as beautiful to look at as it is to drink, making it perfect for garden parties, rooftop vibes, or any occasion where the sun is shining.



Ingredients

• 20ml Gin

• 5ml Elderflower Syrup

• 15ml Cucumber & Basil Cordial*

• 10ml Verjus or White Grape Juice

• 50ml Soda

• 50ml Prosecco

Cucumber & Basil Cordial Method

1. Blend the base: Combine cucumber, basil, and a small amount of water in a blender until smooth.

2. Heat with sugar: Pour the mixture into a small saucepan, add sugar, and heat gently until fully dissolved.

3. Strain: Strain through a cheesecloth into a squeeze bottle. Store in the fridge for up to 1 week.


Cocktail Method

1. Build your base: Add gin, elderflower syrup, cucumber & basil cordial, and verjus (or white grape juice) into a shaker with ice.

2. Shake lightly: Give it a gentle shake to combine flavors without diluting the freshness.

3. Serve: Strain into a wine or highball glass filled with ice.

4. Top up: Add soda and Prosecco, then stir gently to maintain the bubbles.

5. Garnish & enjoy: Add a cucumber ribbon, basil leaf, or edible flower for a summery, elegant finish.

Gently slap the basil leaf before garnishing to release its essential oils — it makes every sip smell as fresh as it tastes.
