Tiki cocktails are known for being bold, layered, and full of island flavour — and at the heart of many of them is Falernum. This Caribbean-born syrup is a hidden gem in the world of tropical drinks, bringing together sweet, spiced, and citrusy notes in one punchy ingredient. Traditionally made with flavours like ginger, lime zest, almond (orgeat), and clove, Falernum has roots in Barbados and has long been a go-to in classic tiki mixes.

If you’re looking for a cocktail that brings full-on tropical energy without the sugar overload, Jungle Mirage is the one to try. It’s bright, spiced, fruity — and a little unexpected. Inspired by classic tiki drinks but given a modern twist, this cocktail is packed with flavour and layered with island-style ingredients.

Jungle Mirage is the perfect balance between tropical refreshment and cocktail craftsmanship. You get the vibe of a tiki drink without all the sugar, and a flavour profile that’s bold but easy to sip. Whether you’re making it for a party or just feeling a bit extra midweek, this drink is the island vibe you need.

Ingredients

• 40ml Spiced Rum

• 15ml Falernum

• 25ml Guava Juice

• 15ml Lime Juice

• 10ml Cinnamon Syrup

• Top with Soda Water

• Garnish: Mint sprig and (optional) grilled pineapple wedge

Step by Step towards the Jungle Mirage

1. Make your cinnamon syrup

  • In a saucepan, combine equal parts sugar and water with 2–3 cinnamon sticks.

  • Let it boil, then simmer until it turns a rich amber colour.

  • Cool it down and store it in the fridge — it’ll last up to a month.

2. Add ingredients to your shaker

  • Pour in the rum, Falernum, guava juice, lime juice, and cinnamon syrup.

  • Add ice and give it a strong shake for 10–15 seconds until chilled.

3. Strain into a highball glass

  • Use fresh ice in the glass and strain the mix in.

4. Top with soda water

  • Add a splash of soda to lift the flavours and bring balance.

5. Garnish

  • Fresh mint is a must but to go the extra mile, if you’ve got time, grill a pineapple wedge for that next-level touch.

Moe’s Tip

Let that cinnamon syrup get nice and dark — the flavour payoff is real. It brings richness and spice that plays beautifully with the guava and lime.
