A Clean Twist on the Cuban Classic Using Oleo Saccharum - A Clear Mojito

The Mojito is one of those timeless cocktails that never goes out of style. With roots tracing back to 16th-century Cuba, it’s been the go-to for anyone craving something minty, citrusy, and ultra-refreshing. But what if you could take everything that makes a Mojito great and give it a modern, crystal-clear twist?

That’s where Oleo Saccharum comes in. This classic technique, which means “oil sugar” in Latin, has been around since punch bowls ruled the bar scene. It’s all about drawing out essential oils from citrus peels (or in this case, mint and lime) using sugar; creating a rich, flavourful syrup that captures pure aroma and taste.


This version ditches muddled mint leaves and cloudiness for a smooth, clear presentation that still hits all the right notes. Clean, zesty, and herbaceous — it’s Mojito, upgraded.


Ingredients

• 50ml White Rum

• 50ml Mint & Lime Syrup (made using Oleo Saccharum method)

• Top with Soda Water

• Garnish: Fresh Mint Sprig


How to Make the Clear Mojito – Step by Step


1. Make your mint and lime syrup

  • In a mason jar, combine:

• A handful of mint leaves and stems

• Peel from 1–2 limes

• Enough sugar to fully coat everything


  • Let it sit for at least 2 hours so the sugar draws out the oils.

  • Once it’s syrupy, add hot water and stir until dissolved. Strain and bottle — it’ll last about a month in the fridge.


2. Build the drink

  • In a highball glass, pour 50ml of the mint & lime syrup and 50ml white rum.


3. Add ice and top with soda water

  • Give it a quick stir to mix everything.


4. Garnish

  • Finish with a fresh mint sprig on top for aroma and presentation.

Oleo Saccharum works with all kinds of fruits and herbs. But don’t let it sit too long before adding the water, or the extraction can max out and turn bitter. Keep it fresh and balanced.
