Easter Island Punch: A Tropical Escape in a Glass

Tiki cocktails have always been rooted in escapism. Originating in the 1930s and popularised by bars like Don the Beachcomber and Trader Vic’s, tiki drinks were designed to transport people somewhere warmer, louder and more exotic through layered rum blends, tropical fruits and theatrical presentation. One of the most important techniques within tiki culture is balance. With so many bold ingredients involved, every citrus, syrup and spirit has to work together without overpowering the drink.

The Easter Island Punch takes inspiration from classic Caribbean milk punch techniques while borrowing the bright tropical structure often found in modern tiki cocktails. The addition of whole milk softens the acidity from the lime and passionfruit, creating a smoother, creamier texture without becoming heavy. It transforms what could have been a sharp tropical drink into something rounder and more luxurious.
For this creation, the goal was to capture the feeling of spring bank holiday escapism — the first stretch of warm weather, long evenings and the energy of wanting to disappear somewhere tropical after months of grey skies. Pineapple and passionfruit bring freshness and sweetness, while the split rum base adds complexity and depth. The overproof rum cuts through at the end, reminding you that despite the soft texture, this is still a serious cocktail underneath the surface.
Recipe
• 40ml aged rum
• 15ml overproof rum
• 60ml pineapple juice
• 30ml passionfruit purée
• 20ml lime juice
• 10ml sugar syrup
• 30ml whole milk
Method
1. Add the aged rum, overproof rum, pineapple juice, passionfruit purée, lime juice, sugar syrup and whole milk into a cocktail shaker.
2. Fill the shaker with ice and shake aggressively for around 15 seconds. This helps properly combine the milk with the citrus while chilling and aerating the drink.
3. Double strain the cocktail into a chilled glass over fresh ice to remove any small shards of ice and create a cleaner texture.
4. Garnish with freshly grated nutmeg, dehydrated pineapple or a mint bouquet for a more elevated tiki presentation.
5. Serve immediately and enjoy while cold.

If you want an even silkier texture, try using clarified milk punch techniques by curdling and filtering the mixture beforehand. It takes more prep, but creates an incredibly smooth tropical cocktail with a crystal-clear finish.
