Jumping from Bar to Bar

My journey behind the bar began during university, working in fast-paced nightclubs where speed, crowd control, and energy defined the experience. It was here that I first developed the foundations of bar service, resilience, hustle, and a deep appreciation for the social connection that comes with pouring a drink.

As my interest in the craft grew, I transitioned into a high-end rooftop bar, where I was introduced to a more refined world of cocktails and mixology. Surrounded by experienced bartenders and a premium spirits list, I gained exposure to the techniques, flavour profiles, and storytelling that elevate a drink from simple serve to signature experience.

Eventually, I took my skills to a local cocktail bar with a more experimental and hands-on environment. There, I was entrusted with the opportunity to not only refine my technique, but to actively create original cocktails and contribute to the menu. This was a turning point, where I moved from following recipes to crafting them, blending creativity with knowledge and building confidence in my own voice as a mixologist.

This bar-to-bar journey laid the groundwork for Moe’s Tavern, giving me both the practical skills and personal insight to create cocktails that are rooted in authenticity, innovation, and experience.
